Grandma's Mashed Potatoes |

I have been working on all of our olde time favorites. I have been trying to make them healthier. Hope this is one you all might like. Ingredients:
4 large potatoes |
1/2 onion, i prefer red |
1 tablespoon butter, yes i prefer the real thing, its better for you |
1 tablespoon fresh garlic |
1 teaspoon sea salt |
dash of pepper |
italian seasoning, optional |
skim, non-fat milk |
grated cheese, optional |
you can use a light gravy if you want |
Directions:
1. Wash the potatoes, poke them with a fork. 2. Microwave them for 20ish minutes. 3. Chop the onion up into small pieces. 4. Place the onion in the bowl you plan on serving the potatoes in. 5. Add butter and garlic, microwave 3 minutes. 6. Once the potatoes are done put them on your cutting board and slice them in half, let them cool for a few minutes so you can handle them. 7. Once the potatoes are cool enough for you to handle, slice them like spear pickles in 4 long lengths. 8. Then chop the potato up fine across the cuts. 9. Really this is just to get the skin into small pieces instead of sliding off and not being used. 10. We like the skin. All the vitamins you know. 11. Put these cubes into the bowl with the onions and garlic. 12. Using a potato masher, mash up the potatoes and onion mixture together. 13. Add the sea salt and pepper. 14. Any other seasoning you might like should be added here, also. 15. Add a little milk at a time until the potatoes are as moist as you want them to be. 16. We like ours somewhat stiff, more like a dolled up baked potato. 17. Easier to make a well in also! 18. Serve. 19. Top with grated cheese. 20. Or gravy! |
