Grandma's Healthy Peanut Butter Oatmeal Cookies |

These cookies have old-fashioned goodness of oatmeal and peanut butter. No fat except what might be in the peanut butter. Drop by teaspoon to limit size of each cookie. Ingredients:
3 egg whites |
1 cup brown sugar |
1 cup peanut butter, reduced fat |
1/2 cup applesauce, unsweetened |
1/4 cup honey |
2 teaspoons vanilla extract |
3 cups old fashioned oats |
3/4 cup whole wheat flour |
1/4 cup wheat germ |
1 cup dry milk, nonfat |
2 teaspoons baking soda |
Directions:
1. In a mixing bowl, beat egg whites and brown sugar. Beat in peanut butter, applesauce, honey and vanilla. In a medium bowl, combine oats, flour, powdered milk and baking soda; gradually add to peanut butter mixture, beating until combined. 2. Drop by teaspoon 2 in. apart onto baking sheets covered with parchment paper (or coated with non-stick spray). 3. Bake at 350 degrees for 8 to 10 minutes until golden brown. Move to wire racks to cool. |
