My grandmother always has these cookies in the cookie jar. For a nut-free version, I use 1/2 c extra corn flakes. Can also sub bran flakes, wheat flakes, Total cereal, whatever you have on hand. Makes a very thin, crunchy but chewy cookie. One of my husband's favorites. Ingredients:
1 cup flour |
1/2 teaspoon baking powder |
1/2 teaspoon salt |
1/2 teaspoon baking soda |
1/3 cup butter |
1/2 cup sugar |
1/2 cup brown sugar |
1 teaspoon vanilla |
1 egg |
1/2 cup chopped pecans |
1 cup corn flakes |
Directions:
1. Cream butter with sugars. 2. Add egg and vanilla. 3. Mix flour, baking powder, salt and baking soda. 4. Add to butter mixture. 5. Stir in pecans and cornflakes. 6. Drop by teaspoonfuls onto ungreased cookie sheets. 7. Bake at 375 for 10-12 minutes. |
