Grandma's Famous Potato Salad |

Low sodium version. Ingredients:
1 cup sour cream |
2 teaspoons mustard |
1/2 teaspoon ground pepper |
2 tablespoons chopped fresh parsley |
2 tablespoons vinegar |
1/3 cup sweet corn relish or 1/3 cup chow chow |
1 teaspoon salt substitute |
1/4 teaspoon sugar |
1/2 cup mayonnaise |
6 cups potatoes |
Directions:
1. Cut potatoes into cubes about 1inch squares. 2. Boil potatoes until soft, but not mushy! 3. Let cool, while mixing all ingredients except the mayonnaise. 4. Blend in mayo last. 5. Pour mixture over potatoes and lightly toss. 6. Refrigerate before serving. |
