This is one of the best homemade coffeecakes I have ever tasted and it was first introduced to me by a close friends husband who always baked it for special occasions. I was fortunate enough to get the recipe years ago so here it is.
Ingredients:
1/2 cup unsalted butter, softened to room temperature
1 1/2 cups sugar
1 1/2 teaspoons vanilla
2 eggs
2 1/4 cups sifted flour
3 1/3 teaspoons baking powder
1 teaspoon salt
1 cup milk
crumbs
1/2 cup unsalted butter
1 cup dark brown sugar
1 cup flour
1 tablespoon cinnamon
Directions:
1. Cream butter and sugar until well blended.
2. Add eggs and vanilla.
3. Mix until smooth.
4. Sift flour, baking powder, and salt together; add alternately with milk.
5. Mix until smooth.
6. Scrape sides of the bowl often.
7. Do not over beat!
8. Preheat oven to 350 degrees.
9. Butter and flour a 9 x 13 x 1/2 inch cake pan.
10. Pour in cake batter and smooth out so it fills entire bottom of the pan.
11. Sprinkle the crumbs on top of the cake.
12. Small crumbs work well but big crumbs will sink into the cake.
13. Bake on middle rack of oven for 25 minutes.
14. Check that the middle of the cake springs back when touched lightly.
15. Cool about 1 hour.
16. Dust generously with powdered sugar.
