Grandma's Creamy Cheesecake

Ingredients:
250 g sweet biscuits, crushed
125 g butter, melted
250 g cream cheese, softened
250 g ricotta cheese
3 eggs, lightly beaten
185 g caster sugar
2 tablespoons cornflour
1 cup sour cream
2 tablespoons grated fresh lemon rind
3 tablespoons lemon juice

Directions:
1. Preheat oven to 160 Celcius.
2. To make base: Mixed biscuits crumbs and butter in a bowl, Press into a 20cm springform tin and chill until required.
3. To make filling:.
4. Cream cheese and ricotta until smooth.
5. Add eggs, sugar, cornflour, lemon rind and juice.
6. Mix until smooth.
7. Pour over refrigerated base.
8. Bake for 50 minutes or until firm.
9. Refrigerate until cold.
10. Serve with lemon curd and cream.
