My ex-husband's granny would make this when they were not having biscuits. She served some kind of hot bread at every meal. I found this recipe after she passed away. We did not know she had written it down because she would just grab a bowl and throw it together. It is good and easy. Ingredients:
1 1/2 cups cornmeal |
3 tablespoons flour |
2 eggs |
1 tablespoon sugar |
1 teaspoon salt |
1 teaspoon baking soda |
1 cup buttermilk |
1/3 cup oil, any |
Directions:
1. Preheat a greased iron skillet on top of stove until hot. 2. Beat eggs,throw everything else in bowl and stir until combined. Pour into hot skillet. 3. Bake at 400°F for 25-30 minutes or until golden. |
