Grandmas Cinnamon Rolls

Yummy sweet iced roll recipe direct from Grandma. Although these are technically cinnamon rolls, they don't really taste like normal ones - they taste more of the coconut extract. Delicious!
Ingredients:
1 little paper package of dry yeast
2 eggs
4 tbsp oil or shortening
1 c hot water
4 t sugar
1 t salt
4 to 4 1/2 c flour
butter for greasing and coating
1/2 to 3/4 c sugar
3/4 tsp cinnamon
1 c powdered sugar
3 tbsp room temperature butter
splash of half & half
1 t coconut extract
splash vanilla (optional)
1 c chopped walnuts (optional)
Directions:
1. Activate the yeast in 1/4 cup of warm (not hot) water with a pinch of sugar. Set aside.
2. Froth the 2 eggs (high speed) in your mixing bowl.
3. Add the oil or shortening to your eggs, and mix.
4. Add the 1 c hot water, 4 t sugar, and salt to the bowl, and mix.
5. If your yeast and water has gone all puffy and bubbly, add it to your bowl and combine. If not, wait a few more minutes before you add it.
6. Slowly add 4 to 4 1/2 c of flour to the mixture, until the dough becomes just dry enough to form into a ball that you can remove from your bowl without too much effort.
7. Grease a large bowl with butter or cooking spray.
8. Put the bread in the bowl (you may want to add a bit of flour to the outside of the bread so it's less sticky).
9. Cover the bowl with a dishtowel and store in a warm place until the dough doubles in size (about an hour).
10. Roll the dough out on a lightly floured surface until it's a rectangle about 18 high by 24 wide. Try to lift the dough a few times while rolling to prevent it from sticking to whatever it's on.
11. Cover the top of the rolled-out dough completely with a thin layer of butter.
12. In a small bowl, mix your 1/2 to 3/4 c sugar (depending on how sweet you want the rolls) with the cinnamon.
13. Sprinkle the sugar/cinnamon mixture onto your buttered dough, working the mixture in a bit with your fingers. Try to make sure the dough is still not stuck to the table!
14. Roll the dough horizontally (hot dog style) so it makes one long 24 roll.
15. Slice the dough roll into 1 to 1.5 inch wide slices.
16. Put the slices onto 2 greased cookie sheets, cover with clean dishtowels, and let raise in a warm place until double in size (about an hour).
17. Bake at 375 for 15-20 minutes, or until tops are light brown.
18. Let rolls cool completely.
19. Mix a thick frosting out of powdered sugar, 3 T butter, half & half, coconut extract, and optional vanilla.
20. Dot the frosting over the rolls (it shouldn't run down the sides of the rolls), and then sprinkle with the nuts.
21. When frosting is hardened, individually wrap rolls with saran wrap so they'll stay soft and delicious for days. Also, these rolls freeze well.
