Grandma's Chicken With Olives and Lemon |

This is my Grandmother's recipe. When we make this it doesn't last very long because it is so yummy! Ingredients:
1/3 cup extra virgin olive oil |
1 large onion, sliced thin |
2 garlic cloves, minced |
1 tablespoon fresh parsley, chopped |
salt |
pepper |
3 -4 lbs chicken pieces |
2 lemons, sliced |
1/3 cup black olives or 1/3 cup green olives, chopped |
1 sprig fresh rosemary |
Directions:
1. Remove seeds from lemons. 2. If using chicken breasts, cut each into thirds. 3. In large pot heat oil, add chicken and lightly brown. 4. Add remaining ingredients, stir to coat. 5. Cover and simmer 1 1/2 - 2 hours. 6. Remove rosemary and serve. |
