A deliciously homey carrot cake adapted from Su Good Eats. Ingredients:
2 cups flour |
2 teaspoons baking powder |
2 teaspoons baking soda |
1 teaspoon salt |
2 teaspoons cinnamon |
2 cups sugar |
1/2 cup oil (was 1 1/2 cups) |
1 cup unsweetened applesauce |
4 eggs (at room temperature) |
1/2 cup walnuts, crushed |
3 cups carrots, shredded |
1 cup pineapple, minced (optional) |
2 teaspoons vanilla extract |
Directions:
1. Sift the flour, baking powder, baking soda, salt, and sugar. 2. Beat the egg. 3. Mix the dry ingredients, beaten egg, oil, apple sauce, carrot, pineapple, walnuts, and vanilla. 4. Pour the mix in a bundt cake pan (don’t need to oil the pan). 5. Preheat the oven to 375 degree, and bake for 1 hour. |
