Grandma's Caramel Corn

A Christmas at my Grandma Frank's house is never a Christmas without her homemade caramel corn. The sweet caramel on top the popcorn is simply delicious. You can forget about the many trays of cookies when this sweet, crunchy treat is around.
Ingredients:
2 cups brown sugar
1 cup butter
1/2 cup honey
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla
6 quarts popped popcorn (either air popped or bagged, but not buttered)
Directions:
1. preheat oven to 200 degrees.
2. in a medium sauce pan, boil first four ingredients to a boil.
3. Remove from heat add the baking soda and vanilla.
4. Pour the mixture over the popcorn. Stir to coat and place on a baking sheet.
5. Bake the covered popcorn for 1 hour, stirring every 15 minuets.
6. Cool and keep covered.
