This recipe was passed down from my great-grandmother. It's a family favorite and we look forward to it every year. And there is always enough for leftovers. Ingredients:
4 lbs boneless beef chuck roast (roast) |
2 tablespoons brown sugar |
3 -4 cups water |
1/2 teaspoon salt |
1 onion (stuck with 2 whole cloves) |
1/2 teaspoon mustard powder |
2 bay leaves |
1 cup catsup |
2 tablespoons butter |
2 tablespoons vinegar |
1/2 cup chopped onion |
2 tablespoons worcestershire sauce |
hamburger bun |
Directions:
1. Place meat, water, onion and bay leaves in a large pot. 2. Simmer covered until tender. 3. Remove meat. Reserve 1 cup broth. Discard onion and bay leaves. 4. Cool and shred meat. 5. Melt butter in same pan and add chopped onion, sauté. 6. Stir in sugar, salt, mustard, catsup, vinegar, Worcestershire sauce and 1 cup broth. 7. Add shredded meat and mix gently. 8. Simmer 30 minutes. 9. Serve on rolls. |
