This was my grandmother's recipe for banana pudding. It's the best I have tried.
Ingredients:
6 ripe bananas
3 1/2 tablespoons all-purpose flour
1 1/3 cups sugar
1 dash salt
3 large eggs, separated
3 cups milk
1 (12 ounce) package vanilla wafers
1/4 cup sugar
2 tablespoons sugar
1 teaspoon vanilla extract
Directions:
1. Combine flour, sugar and salt in a heavy sauce pan.
2. Beat egg yolks. Combine egg yolks and milk, mixing well. Stir into dry ingredients.
3. Cook over med heat, stirring constantly until smooth and thickened. Remove from heat.
4. Stir in 1 tsp vanilla.
5. Layer one-third of wafers in 3 qt baking dish. Slice bananas and layer over wafers. Pour 1/3 of cusard over bananas. Repeat layers twice.
6. Beat egg whites until foamy. Gradually add 1/4 c plus 2 tbsp of sugar, 1 tbsp at a time, beating until stiff peaks form.
7. Add 1 tsp vanilla and beat until blended.
8. Spread meringue over custard, sealing edges of dish. Bake at 425 for 10-12 min or until golden brown.
