My grandmother grew up on a farm, and in her day many vegetables were served in cream or milk. I have never seen asparagus served this way in any other home, but it is one of my favorites when fresh asparagus is in season. The amounts of ingredients are just a guess, and you can adjust them depending on how much asparagus you want to prepare.
Ingredients:
1 lb fresh asparagus
1 tablespoon butter (or to taste)
2 cups milk
12 saltine crackers
Directions:
1. Cut asparagus into 1-inch pieces and cook in a small amount of water with a dash of salt just until tender. Drain.
2. Add butter to taste. Set aside.
3. Gently warm (but do not boil) enough milk to cover asparagus.
4. For each portion, place 3 saltine crackers in bottom of a sauce dish, top with a portion of the buttered asparagus and pour on milk to cover about 3/4 of asparagus.
