My grandma made me this cake when I went to her house over Thanksgiving, and I really wanted to make some of my own so I searched the web for a recipe. It says to bake it for 45 minutes, but my cake was done in 30.
Ingredients:
4 cups peeled and diced cooking apples
2 teaspoons baking soda
1/4 cup margarine, softened
1/4 cup unsweetened applesauce
1 cup granulated sugar
1 cup splenda sugar substitute
1 egg
2 egg whites
2 cups all-purpose flour
1 teaspoon cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
Directions:
1. In a medium bowl, toss together the apples and baking soda; set aside.
2. In a large mixing bowl, beat together the sugar, Splenda, margarine and unsweetened applesauce with an electric mixer until creamed. Add egg and egg whites; beat well.
3. Stir together the flour, cinnamon, salt, and nutmeg. Add to large mixing bowl and beat until combined. Stir in apple mixture (If you so desire, you can add a cup of chopped walnuts to the mixture as well).
4. Evenly spread batter into a greased 13x9x2-inch baking pan. Bake in a 350 degree F oven for 30-45 minutes. Serve warm or at room temperature topped with Cool Whip.
