Grandmas Apple Blueberry Cake |

this cake is filled with blueberries and apples with whipped cream on top .. the recipe is from the Country Heritage Cookbook by Land o' Lakes... Ingredients:
1/2 cup butter, softened |
1/4 cup whipping cream |
1 1/4 cups sugar |
3 eggs |
2 1/3 cups flour |
2 teasp. baking powder |
1/2 teasp. salt |
2 cups peeled cored coarsely chopped tart cooking apples |
2 cups fresh or frozen blueberries |
sweetened whipped cream |
Directions:
1. in a 1 quart saucepan combine butter and cream 2. cook over low heat, stirring occasionally, until butter melts about 7 minutes...set aside 3. in a large mixer bowl... combine sugar and eggs 4. beat at medium speed, until well mixed 5. add butter mixture, flour, baking powder and salt 6. continue beating until smooth ( 1 - 2 minutes) 7. by hand stir in apples and blueberries 8. spread batter in a greased and floured 13 x 9-inch baking pan 9. bake in a preheated 350' F oven for 45 - 55 minutes 10. or until wooden toothpick inserted in center comes out clean 11. serve warm with sweetened whipped cream |
