Grandmamas Vegetable Soup |

This is my Grandmama Coker's vegetable soup-always best when the vegetables come straight from the garden! The soup isn't overcooked and the vegetables are added last to preserve the clarity of the flavors. Ingredients:
1 fist-sized ham hock |
2 c water |
6-8 fresh tomatoes, chunked (if very acidic add 2t sugar) |
3/4 c small butterbeans - fresh, cooked for 20 minutes |
1/4 c okra - fresh, cooked for 20 minutes |
3/4 c corn - fresh, cooked for 15 minutes |
Directions:
1. Bring the water and ham hock to boil in a large pot, then reduce to simmer and cook for one hour. 2. Add tomatoes, bring back to boil, then simmer for one more hour. 3. About 20 minutes before eating add the butterbeans and okra, then the corn. (Even if you don't like okra-add it! It's the secret ingredient.) 4. Add black pepper liberally and salt to taste. 5. This keeps for several days in the refrigerator and freezes exceptionally well! You can easily double or triple the recipe (but you need only one ham hock) |
