My MIL taught me to make mashed potatoes using evaporated milk instead of milk or cream. I have never made them any other way since, the evaporated milk 'whips' and they are the creamiest, tastiest potatoes ever! Try them, you'll love them!! Ingredients:
6 medium potatoes, peeled and cubed |
1/2 cup evaporated milk |
1/4 cup butter |
salt |
pepper |
Directions:
1. Boil the potatoes until fork tender, drain and mash adding the butter, salt and pepper. Gradually add the evaporated milk beating until the potatoes are light and fluffy. It may take a bit more milk, use your judgement and mix to the consistency that your family likes. |
