Potato candy is a treasured memory of Christmas past. Grandma Shufelt, and then Aunt Claris made this rich treat only once each year. Was Dad ever surprised when I made it for him after my aunt passed. I'm the only family member who thought to ask for this 'secret' recipe. Ingredients:
3 medium potatoes |
1 cup shredded coconut |
1 cup chopped nuts (choice) |
1 teaspoon vanilla |
3 lbs powdered sugar |
dipping chocolate (i use dark chocolate) |
Directions:
1. Cook and mash potatoes. 2. While still warm, add the powdered sugar. 3. Mix well. 4. Add the coconut and nuts (I use peanuts). 5. Add vanilla. 6. Mix well. 7. Form into small shapes or balls and leave for a while to cool and set. 8. Melt dipping chocolate in a double boiler. 9. Using a toothpick, roll each ball into the melted chocolate. 10. Store in a cool place. |
