Grandma Sayler's Potato Soup |

This recipe comes from my wife's side of the family. The standard comfort food goodness of a German cream soup mixed with the ingredients available to northern prairie pioneers. Ingredients:
4 -5 medium potatoes |
1/2 lb bacon |
1 cup chopped onion |
2 cups milk |
1 cup cream |
salt |
pepper |
Directions:
1. Peel and cut potatoes. 2. Barely cover potaoes with water and boil until just harder than you want. 3. Slice bacon into bite size bits and fry. 4. When bacon is nearly done add onions and carmelize. 5. When potatoes are ready remove most but not all the water and add milk,. 6. cream, and bacon onion mix. 7. Bring back to boil and simmer until potatoes are desired tenderness. 8. Salt and pepper to taste. |
