During World War II meat was scarce and rationed. Butchers came up with a recipe for ham loaf for the holidays since most people could not afford a whole ham. Since then this recipe has been a family favorite and served at our family gatherings. Ingredients:
1 1/2 lbs veal or 1 1/2 lbs ground beef |
1 lb finely ground ham |
1 cup cracker crumb |
1 cup milk |
salt & pepper |
2 eggs |
1 cup brown sugar |
2 tablespoons paprika |
1 tablespoon dry mustard |
1/2 cup vinegar |
1/2 cup water |
Directions:
1. Mix first 6 ingredients, well with hands and mold in pan. Cover with foil and bake at 250 – 275 degrees for 2 1/2 - 3 hours. Keep covered until the last 1hr. 2. While ham loaf is baking prepare sauce with remaining ingredients: place all ingredients in a small sauce pan bring to a boil for a minute. Simmer 10-15 minutes. 3. When one hour remains drain off liquid from ham loaf and pour over sauce ham loaf. Basting every 15 minutes until sauce forms a glaze. Turn up a heat a little. |
