This Irish bread is wonderful hot from the oven smothered with fresh butter(none of that margarine spread business[at least in this case]). This recipe is from my Grandmother, who came to this country in the year 1900 from Ireland. Since she was always pretty poor(in possessions/money) this is a cheap to make recipe.
Ingredients:
1 egg
1 1/4 cups milk (whole preferred)
3 cups flour (any type)
3 teaspoons baking powder
1 teaspoon salt, measured
1 cup sugar (cane preferred)
1 cup raisins (to taste)
Directions:
1. Mix together flour, baking powder, salt, sugar, and raisins.
2. Next, make a well in the center of the flour mixture for the egg.
3. Crack the egg into the well in the flour mixture.
4. Add the milk a little at a time, making sure to keep batter thick.
5. Grease and flour a nine-inch round pan.
6. Spread batter into the pan. Brush over top of the bread mixture with the remaining milk, for browning. Make an X or cross with the milk, to let the fairies out.
7. Bake at 400 degrees fahrenheit for thirty minutes. At the end of thirty minutes, turn the oven temperature down to 350 degrees and leave the bread in the oven for a further fifteen minutes, or until a toothpick inserted in the center comes out clean.
