Grandma Phyllis' Holiday Cranberry Salad |

My grandma made this cranberry dish for every holiday dinner and it's one of my fondest memories. It has just enough sweet to balance out the tartness of the cranberries. It's a great dish if you're looking for a new way to include cranberries in your Thanksgiving meal. (She sometimes put in walnuts or pecans for a little extra crunch.) Cooking time is for the jello to set up in the refrigerator. Ingredients:
1 (10 ounce) container indian trail cranberry orange frozen relish (sometimes hard to find. look for it with the frozen fruit around thanksgiving and keep it in the fre) |
2 (14 ounce) cans whole berry cranberry sauce |
2 (3 ounce) boxes cranberry jello gelatin or 2 (3 ounce) boxes cherry jell-o |
mini marshmallows |
Directions:
1. Break up Indian Trail relish and cranberry sauce with a fork, mix together well. 2. In a separate bowl, make jello with 2 1/2°C boiling water. 3. Pour jello over relish mixture in a 9 x 13 pan. Stir until combined. 4. Refrigerate until jello starts to set up, then add a layer of mini marshmallows on top. 5. Return to refrigerator until completely set up. |
