Grandma Ob's Sweet Potato Souffle |

This recipe came from my grandma and I've adapted it to fit my tastes. Great for Thanksgiving. Ingredients:
4 cups mashed sweet potatoes |
1 cup sugar |
1/2 cup silken tofu, pureed |
1/2 cup soymilk |
1/2 teaspoon salt |
2 tablespoons margarine, melted |
2 teaspoons margarine, melted |
1 teaspoon vanilla |
1 cup brown sugar |
1/2 cup flour |
2 tablespoons margarine, melted |
2 teaspoons margarine, melted |
1 cup pecans |
Directions:
1. Preheat oven to 350 degrees. 2. Mix ingredients for souffle very well and pour into a buttered pan. 3. Crumble the topping evenly over the sweet potatoe mixture. 4. Bake for 35 to 45 minutes uncovered. |
