Grandma Mudge's Raisin Filled Cookies |

This is another of the fine recipes from my Mom's collection - Hope you enjoy it - Ingredients:
2 1/2 cups raisins |
2 cups sugar |
2 tablespoons flour |
1 cup hot water |
2 cups vegetable shortening |
2 cups sugar |
1 teaspoon salt |
2 eggs |
1 teaspoon vanilla |
1 cup milk |
3 teaspoons baking powder |
2 teaspoons baking soda |
7 cups flour |
Directions:
1. FILLING: Grind raisins in food processor. Raisins should not become a paste. In a heavy saucepan, combine ground raisins, sugar, flour and water. Cook over medium heat, stirring until mixture thickens. It should not be runny. Set aside to cool. 2. COOKIE DOUGH: In a large bowl, mix together in order. Roll out to 1/4-inch thickness. Cut into pairs. Place one part of pair on ungreased cookie sheet. Put 1 heaping teaspoon of filling in center. Top with other half. Seal edges by gently pressing together. 3. Bake at 400F for 8-10 minutes. |
