My Grandma used to make this when I was growing up. It's delish! You can use any type of filling that you prefer...doesn't have to be the nut filling. Ingredients:
1/2 cup warm water |
1/4 ounce yeast |
1 teaspoon sugar |
2 cups flour |
3 tablespoons sugar |
1 1/2 teaspoons salt |
1/2 cup butter |
3 egg yolks |
1 cup sour cream |
1 lb walnuts (ground fine) |
1/2 cup butter |
3/4 cup milk (scalded) |
2 tablespoons lemon zest (optional) |
3/4 cup sugar |
3 egg whites |
Directions:
1. In a small bowl, mix water with yeast & 1 tsp sugar. Let stand until foamy. 2. Mix flour , sugar, and salt. Cut in butter with pastry cutter (or 2 butter knives). 3. Mix egg yolks with sour cream and add to yeast mixture. 4. Make a well in flour mixture and add liquid mixture. Knead until smooth. 5. Place dough in greased bowl and grease top of dough. Let rise until double in size (1 1/2 hours). 6. Cut dough into 3. Roll each into a rectangle. 7. Spread filling over dough and roll tightly. 8. Bake at 350 degrees for 1 hour. 9. Nut Filling: Mix first 5 ingredients together. 10. Beat egg whites and fold into nut mixture. 11. Fill roll. 12. Alterations: Any pie filling or poppy seed filling can replace the nut filling. 13. You can also refrigerate the dough overnight without first rising time and then cut into 3 pieces roll into rectangles then fill and roll. Let dough rise for 1 hour if refrigerating. |
