Grandma Joy's Easy Affordable Mac and Cheese |

This Mac and Cheese is one of my college roommates Grandmothers recipe, it is super easy (no roux :) and it is always delicious! Hope you enjoy this dish. Even if you aren't that fond of Mac & Cheese, this recipe will win you over. Makes a great side dish or a meatless meal. If you don't like chilies, it is just as good if you omit them. Ingredients:
1 3/4 cups uncooked elbow macaroni |
2 cups small curd cottage cheese |
1 cup sour cream |
1 large egg |
3/4 teaspoon salt |
pepper |
2 cups shredded cheddar cheese |
1 (4 ounce) can green chilies |
2 tablespoons butter |
paprika |
Directions:
1. Cook macaroni, drain well. Combine cottage cheese, sour cream, egg (slightly beaten), salt and pepper; add shredded cheese. Mix well. Stir in the cooked macaroni while still warm. Turn 1/2 the mixture into well buttered pan or baking dish. Sprinkle chilies on mixture and top with remaining mixture. Dot with butter and sprinkle with paprika. Bake at 350 degrees for 40 minutes or until slightly brown and bubbly. Do not overcook. |
