These were one of my favorite cookies growing up. My best friend's Grandmother made them every time we got together. It is a very old recipe according to her. They are a melt in your mouth ginger cookie with delicate flavors . Read more ....ummmmm. Ingredients:
1 cup sugar |
1/4 cup shortening |
1/2 cup butter |
2 eggs |
1 tsp vanilla extract |
2 tablespoons molasses |
3 1/2 cups unbleached flour |
1 tsp ground ginger |
1 tsp cinnamon |
1 tsp baking soda |
1 tsp baking powder |
1/2 cup cinnamon sugar |
Directions:
1. In mixer bowl, cream sugar with shortening and butter 2. While that is working, sift together all dry ingredients: flour, ginger, cinnamon, soda, baking powder. 3. After butter, shortening and sugar are creamed, add one egg at a time and beat well. Then beat in the molasses and vanilla. 4. Slowly tap in the dry ingredients while mixer is on slow. This makes a soft dough. 5. Place dough in refrigerator for at least an hour. 6. Take enough dough and roll it round in your hand. I make them about 1 to 1 1/2 inch diameter balls. Then roll them in the cinnamon sugar (about 1/2 cup sugar with a level teaspoonful of cinnamon). 7. Place on an ungreased cookie sheet and bake for about 12 minutes at 350 degrees. 8. Cool on racks. |
