Grandma Hagans Winter Soup |

This is a unique family recipe that has been passed down through several generations by observation and hands-on preparation. It's only recently been put to pen. Ingredients:
2 cup northern beans; dried |
1 1/2 cup carrot; chopped |
1 1/2 cup cabbage; chopped |
4 cup potatoes; diced |
1/3 cup rice |
2 single onion; chopped |
3/4 box elbow macaroni |
1 quart tomato juice |
milk |
butter |
salt and pepper |
Directions:
1. Stock: On the night before preparation, cover beans in a pot with water and place in refrigerator. 2. On the day of preparation, cook the beans and onions for 1 to 1 1/2 hr. 3. Add carrots and cabbage, then potatoes and juice. Add macaroni and rice last. 4. Serving instructions: Remove as much stock as needed and place in a pot. Add milk to desired color and thickness (generally, the soup should appear light pink). Add 1 tsp butter per serving, salt and pepper to taste, heat and serve. |
