Grandma Gullickson's Rhubarb Cake |

This is one of my favorite childhood recipes:) Ingredients:
2 cups sugar (divided) |
1/2 cup butter (softened) |
2 cups flour |
1 cup sour milk |
1 egg |
1 pinch salt |
1 teaspoon vanilla |
1 teaspoon baking soda |
1 teaspoon baking powder |
2 1/2 cups rhubarb (divided) |
2 tablespoons cinnamon (divided) |
Directions:
1. Preheat oven to 400 degrees. 2. Mix 1/2 cup sugar, 1 tablespoon cinnamon, and 1/2 cup rhubarb in small bowl for topping. Set aside. 3. Mix butter, sugar, sour milk and egg. 4. Add dry ingredients. 5. Mix in rhubarb. 6. Pour into a greased and floured 9 x 13 pan. Sprinkle on topping. 7. Bake at 400 for 10 - 15 minutes. 8. Reduce heat to 350 degrees. Bake another 30 minutes. 9. Let cool before serving. |
