Grandma Gerber's Beet Soup |

This is my girls' favorite soup recipe. I add lots of dill to the soup and serve it with sour cream. Ingredients:
1 quart tomato juice |
1 (15 ounce) can beef broth |
1/2 head cabbage |
1 (15 ounce) can pickled beets |
5 carrots |
1 lb ground beef |
1 small onion |
1 (15 ounce) can red beans (drained) |
1 (8 ounce) can tomato sauce |
dill |
salt & pepper |
1 cup milk |
Directions:
1. Mince onions and cook with ground beef in a large stock pot. Chop cabbage set aside. Shred carrots set aside. Once beef is cooked add all remaining ingredients except milk. Bring everything to a boil until the cabbage is clear and the carrots are soft. Add milk. |
