Grandma E's Sweet Potato Casserole |

My grandmother makes this at all our holiday gatherings. I personally don't like sweet potatoes with marshmallows, this is a great alternative. I know there are a gazillion sweet potato casserole recipes, but I like this one, and am posting it for safe-keeping. Ingredients:
3 cups sweet potatoes, mashed |
1/2 cup brown sugar |
1/2 cup milk |
1/4 cup butter, melted |
2 eggs, beaten |
1 teaspoon vanilla |
1 dash salt |
1/4 cup sugar |
1/4 cup flour |
1 (8 ounce) can crushed pineapple, undrained |
1/4 cup butter, melted |
2 eggs |
Directions:
1. Preheat oven to 350. 2. Mix casserole ingredients together. Place in 9x13 casserole dish. Set aside. 3. Mix remaining ingredients, sprinkle on top of sweet potato mixture. 4. Bake for 45-50 minutes. |
