This is a family recipe that my grandma and mom used to make. Really good and easy. Great with that Turkey for Thanksgiving and Christmas Ingredients:
6 slices white bread, torn into small pieces |
1 sleeve saltine crackers, crumbled |
8 tablespoons butter |
1 1/2 cups celery, chopped fine |
1 large onion, chopped fine |
5 cups chicken stock |
1 can cream of chicken soup |
1 can chicken noodle soup |
1 teaspoon poultry seasoning |
dash salt |
3 cups cooked cornbread, crumbled |
freshly ground black pepper |
4 eggs, beaten |
2 boiled eggs(optional) chopped |
Directions:
1. In medium skillet or pot, saute onions and celery in butter until jut tender. 2. In a large bowl, mix together the crackers, bread pieces, and cornbread. 3. Add onion mixture, soups, and chicken stock and mix well. 4. Stir in poultry seasoning, salt and pepper and adjust to taste. 5. Stir in eggs and let sit for 5 minutes while you preheat oven to 350.. 6. Pour mixture into greased or buttered casserole dish. 7. Bake 45 to 50 minutes. |
