This is my mother in-law's buttermilk biscuit recipe. It makes the lightest biscuits! I make a double-batch and there are never any left over.
Ingredients:
2 cups regular white flour
1/2 teaspoon salt
4 teaspoons baking powder
1/2 teaspoon baking soda
5 tablespoons butter or shortening
1 cup buttermilk
Directions:
1. Preheat oven to 450F.
2. Sift the dry ingredients together three times (I think this is what makes them so light!).
3. Cut in the butter and blend it in with a pastry fork.
4. Stir in the buttermilk.
5. Dump out the biscuit dough onto a floured surface. Sprinkle lightly with more flour and gently flatten the dough until it is about 3/4-inch to 1-inch thick.
6. Cut out biscuits and place biscuits on an un-greased baking sheet, about 1/2-inch apart.
7. Bake for about 10 to 15 minutes or until the biscuits are lightly browned.
8. NOTE-Sweet milk can be used in place of the buttermilk, but you need to leave out the baking soda.
