This is my granmother's banana salad recipe that I have never seen in print anywhere. This is truly a family favorite and much anticipated when it's on the menu. It isn't like the vanilla wafer banana salad and is just really delicious to have a time or two a year. Ingredients:
1 1/2 cups water |
1 egg |
dash of salt |
1 cup sugar |
2 heaping tbls flour |
juice of one lemon (1-2 t. of lemon juice is fine) |
1 t. butter |
10-12 bananas |
1 cup crushed cocktail peanuts |
Directions:
1. Put the water on to boil. 2. In medium bowl, beat one egg w/salt. 3. Add 1 cup sugar. 4. Pour into medium saucepan over medium high heat. 5. Add 2 heaping tbls flour and stir to combine well. 6. Add lemon juice and stir. 7. Add 1-1/2 cups boiling water and cook until thickened like thin pudding. 8. Add the butter. Stir well. 9. Chill until cooled. 10. Slice the bananas and mix with the pudding. 11. Place in serving bowl and top with crushed peanuts. 12. Chill. 13. Enjoy. |
