This mild pleasant tasting pasta salad will compliment anything comin' off that grill! (We just had this today and I couldn't resist putting it on here!) Ingredients:
1 - 16pkg. tube pasta |
2 c. halved cherry tomatoes |
1 -4 oz. block provolone cheese, cubed |
1 c. chopped sweet red pepper |
1/2 c. chopped green pepper |
1 med. onion, chopped |
1 - 14 oz. can pitted olives, drained |
dressing |
2/3 c. veg. oil |
1/3 c. red wine vinegar or cider vinegar |
3 tbsp. minced fresh basil or 3 tsp. dried basil |
1 garlic clove, minced |
1 tbsp dijon mustard |
1-1/2 tsp. salt |
1 tsp. sugar |
1 tsp. onion powder |
Directions:
1. Cook pasta, accord. to directions on pkg., drain, rinse w/ cold water 2. Place pasta in a salad bowl 3. Add tomatoes, cheese, peppers, onion, and olives 4. _______________________ 5. Whisk together dressing ingredients until sugar dissolved 6. Pour over pasta mixture, toss to coat 7. Refrigerate until serving |
