The day finally arrived when they announced the grand prize winning recipe. Pen in hand (as they were also giving out the recipe) I waited. Read more . Think of Alvin and the Chipmunks that was how fast the ingredients were listed and reamed off. Well this is how I make them . they are delicious. but I am really not sure If I got the original recipe exactly right. Regardless these are worth making and my family loves them. Ingredients:
2 cups flour |
3/4 cup sugar |
1 1/2 tsp baking powder |
1/2 tsp salt |
1/2 tsp baking soda |
3/4 cup chopped pecans |
1/4 cup grapeseed oil ( or canola) |
2 tsp orange zest |
3/4 cup orange juice |
1 large egg |
1 1/3 cup chopped rhubarb |
Directions:
1. Preheat oven 350* 2. Combine dry ingredients add fruit toss to coat 3. make a well in center 4. In smaller bowl beat egg 5. add oil and juice beat well 6. Pour into dry 7. mix just until dry is just moistened 8. Spoon into sprayed or lined muffin cups 9. Bake at 350* 25-30 minutes |
