Grand Ma Dot's Baked Macaroni and Cheese |

When I think of Sunday or holiday dinners, I always think of my Grandma Dot's Baked Macaroni and Cheese. Old fashioned, reliable and just plain good. Ingredients:
8 ounces elbow macaroni |
2 cups cheddar cheese or 2 cups monterey jack and cheddar cheese blend |
2 cups milk |
1 tablespoon cornstarch |
1 teaspoon salt |
4 tablespoons butter |
2 eggs |
2 dashes tabasco sauce or 2 dashes hot sauce |
Directions:
1. Prepare macaroni according to package directions. Rinse with cold water. Drain. 2. Make thin white sauce: Mix milk and corn starch until smooth. Add salt and butter. Bring to boil stirring constantly. Boil one (1) minute. Set aside and grate cheese. 3. Mix cheese with white sauce reserving 1/2 C for topping. 4. Mix in beaten eggs and Tabasco. Make sure sauce is not too hot to cook the eggs. 5. Mix in macaroni. Pour into buttered (or Pam sprayed) baking dish. 6. Top with remaining cheese. 7. Bake in 375 oven for 45 minutes. 8. To make a white sauce using flour:. 9. Melt butter. 10. Mix in 4 T flour and salt using a whisk to stir until well blended. 11. Gradually pour in milk; stirring constantly. 12. Bring to boiling point and boil 2 minutes (stirring constantly). 13. Reduce heat and cook (stirring constantly) 10 minutes. |
