If you use mild salsa, it can be a mild dish for those who don't like heat. Ingredients:
1 1/2 cups boneless skinless chicken breasts, cooked and diced |
1 (10 3/4 ounce) can cream of chicken soup |
1 cup salsa |
2 cups rice, cooked and hot |
1/3 cup low-fat cheddar cheese, shredded |
6 tablespoons fat free sour cream |
1 teaspoon parsley flakes, dried |
Directions:
1. Preheat oven to 350°F. 2. In a large bowl, combine chicken, soup, 1/2 cup salsa, and 2 tablespoons sour cream. Add parsley flakes, rice, and cheese. Mix well to combine. 3. Pour mixture into baking dish. Bake 20 minutes. 4. In a small bowl, combine remaining 1/2 cup salsa and 4 tablespoons sour cream. 5. Spread mixture evenly over top of casserole and continue baking 10 minutes. 6. Place baking dish on wire rack and let set for 2 to 3 minutes. |
