This recipe came from an estate sale. I obtained it when I purchased the family collection from the Brunson Estate in Midlothian, Texas in 1990.
Ingredients:
3 cups all purpose flour
1-1/2 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1 cup butter softened
12 ounces cream cheese softened
2-1/2 cups granulated sugar
4 eggs
1 teaspoon vanilla
3 cups peeled diced tart apples
sifted powdered sugar
Directions:
1. Preheat oven to 350 then grease and flour a tube pan.
2. Sift together flour, baking powder, salt and cinnamon then set aside.
3. Beat butter, cream cheese and sugar for 8 minutes on medium speed.
4. Beat in eggs one at a time scraping sides of bowl between additions then beat in vanilla.
5. Reduce mixer speed to low and gradually add flour mixture.
6. Stop mixing as soon as the flour is incorporated then gently fold in the apples.
7. Pour batter into prepared pan then bake 1 hour.
8. Cool 10 minutes and remove from pan.
9. Cool completely and top with sifted powdered sugar.
