Grand Beach Sugar Snap Peas with Mint and Lemon |

A delightful preparation of Sugar Snap peas that makes them even better! Ingredients:
16 oz sugar snap peas, trimmed and strings removed |
1 tsp of olive oil |
3 cloves garlic, finely chopped |
1/3 cup mint, chopped |
1 tsp white pepper |
3 tbsp lemon juice |
1 tbsp lemon zest |
Directions:
1. Clean and rinse peas. 2. Add peas to 3 quarts of rapidly boiling water. 3. When the peas are bright green and still crisp remove with a slotted spoon to a bowl filled with ice water to rapidly cool and stop the cooking to keep them crisp. 4. Add garlic, finely chopped mint, lemon zest, the juice of one lemon and the white pepper to a mixing or serving bowl. 5. Toss well and serve. |
