Baby Artichoke and Tomato prepared provencal Ingredients:
1 (336g) artichoke, halved hearts |
1 (596g) cherry tomatoes, halved |
18 cloves garlic, chopped |
1 (200g) onion, chopped |
1 tsp olive oil |
4 tbsp cilantro, finely chopped |
1 tsp thyme |
1 tsp basil |
1 cup water |
Directions:
1. Brown garlic, onions and spices in olive oil over medium high heat 2. Brown cut side of artichoke hearts 3. Add halved tomatoes, add cup of water or white/red wine and bring to a boil 4. lower heat to simmer when half the liquid remains cover for 5 minutes then serve |
