Granary Toasts With Smoked Fish, Horseradish, and Orange |

A very gourmet way to use up the leftover bits of smoked mackerel we have, which is a real favourite at our house. You could easily multiply this for a great party pleaser, I think, though you'd need to assemble it at the last minute so it wouldn't go all soggy. Ingredients:
2 slices granary bread |
1 tablespoon horseradish cream |
1/2 orange, peeled and thinly sliced into rounds |
2 slices boneless smoked mackerel, skinned and flaked |
Directions:
1. Lightly toast bread slices. Spread each slice with horseradish cream. Top with orange slices and pieces of mackerel. Grill/broil under medium-low heat 2-3 minutes. |
