Grammy's two-Step Shepherd's Pie |

My great-grandma created this recipe in the 50's or 60's and it was a favorite of mine growing up. Just like real shepherd's pie, it is an excellent way to used leftover mashed potatoes! You can easily double this recipe and it turns out just as great! Ingredients:
1 1/2 lbs ground beef |
1 (10 3/4 ounce) can condensed tomato soup |
1 (12 ounce) bag frozen cut green beans |
3 cups frozen tater tots or 3 cups mashed potatoes |
2 cups shredded cheddar cheese |
ketchup, to taste |
Directions:
1. Preheat oven to 450°F. 2. Brown ground beef in a skillet. Drain. 3. Add tomato soup (no water!) to the ground beef. Stir thoroughly. 4. In a 9x9 glass pan, layer frozen green beans, ground beef mixture, and tater tots or mashed potatoes. Sprinkle with shredded cheese. 5. Bake for 20 minutes. 6. Serve with a dollop of ketchup on top. Goes great with biscuits! |
