These cookies taste more like a heavenly piece of fudge than they do a cookie, and they are definately On The Top Of MY LIST . YUM. Enjoy. Ingredients:
2 cups sugar |
1/3 cup cocoa powder |
1/2 cup butter |
1/2 cup milk |
1/2 cup peanut butter |
1 teaspoon vanilla |
2 1/2-3 cups quaker oats |
1/2 cup walnuts, chopped (optional) |
1/2 cup flaked coconut (optional) |
1/2 cup raisins (optional) |
Directions:
1. Mix the sugar, cocoa, butter, and milk in a med. saucepan, and heat over med. heat, stirring occasionally, until mixture comes to a boil. 2. Let mixture boil for 2 1/2 mins., then remove from heat. 3. Stir in the peanut butter, vanilla, and oats. If you are adding coconut and/or raisins, add at this time too. 4. If it looks on the runny side and soft, add another 1/2 cup oats gradually, until desired thickness, and mix well. 5. You don't want them to spread out too much when you drop them onto the wax paper. 6. Working quickly, drop by teaspoonfuls onto waxed paper or aluminum foil. 7. Let cool. 8. The serving size is approximate, as it depends on how big you make them. |
