Gey Gramma use to make these in the truckload full back in the day, moist, tasty and still a classic even years after she passed away. Ingredients:
1/2 cup margarine |
1 3/4 cups brown sugar |
2 eggs |
1 cup cooked pumpkin |
1 cup white flour |
1 cup brown flour |
1/2 teaspoon salt |
1 teaspoon baking powder |
1 teaspoon baking soda |
1 teaspoon cinnamon |
1 teaspoon clove |
1 teaspoon ginger |
1 teaspoon nutmeg |
1 cup raisins |
1/2 cup coconut |
1 apple, chopped up |
1 cup of chopped walnuts |
Directions:
1. preheat oven to 375°. 2. Cream margarine and sugar in mixer. Add eggs, pumpkin, spices, salt, baking soda and baking powder. 3. Mix in flours. 4. With wooden spoon, mix in remaining ingredients. 5. Drop teaspoonfuls onto greased cookie sheet. 6. Bake for 12-15 minutes. |
