My MIL makes these every Christmas, my kids love them, but they also claim that they hate dates, coconut, and walnuts! go figure! These keep for a really long time, so they are a good addition to your holiday treats to have on hand Ingredients:
1 cup chopped dates |
1 cup walnuts |
1/2 cup coconut |
1 teaspoon baking powder |
3/4 cup pastry flour |
1 cup sugar |
1 teaspoon salt |
2 eggs |
1 teaspoon vanilla |
1/2 cup fruit or 1/2 cup icing sugar, for rolling |
Directions:
1. Mix the dry ingredients well, then add slightly beaten eggs. 2. Bake in shallow greased pan in a thin layer at 325 for 25 minutes. 3. Cut with a sharp knife while still warm, roll into logs, and roll in icing sugar or fruit sugar. |
