My Great Grandmother use to make this bread and it was delicous , I have cleaned it up a bit replacing the white flour with a variety of flours and replacing sugar with honey . I also replace the 1/4 cup of shortening with 1/8 cup olive oil and 1/8 cup butter . Read more . Still a delicious , dense bread, just a little more nutritious. Ingredients:
2 1/2 cups cooked red river cereal -thick |
1/8 cup of butter |
1/8 cup of olive oil |
1/4 cup of molasses |
4 cups of whole wheat flour |
4 cups of spelt flour |
1 cup of oatmeal |
1 cup of bran |
1 1/2 tbsp honey |
3/4 c can milk |
1 quart warm h2o |
Directions:
1. Make a thick cereal as per directions on box , mix 2 1/2 cups with butter, olive oil and molasses , set aside 2. In a large bowl combine flours , oatmeal, bran and honey 3. Add milk , water and cereal mixture to dry ingredients , combine well, add flour as needed . 4. knead for 8-10 minutes on floured surface 5. Let rest for 10 minutes, form into loaves 6. Let rise until doubled (about 30-60 mins) 7. Bake at 350 for 45 minutes. |
