A healthy casserole. Ingredients:
5 medium carrots, thinly sliced |
2 cups corn |
1 medium onion, diced |
1 cup quick-cooking barley |
1/2 cup bulgur |
1 teaspoon salt |
1/2 teaspoon pepper |
3 cups vegetable broth |
1 (15 ounce) can black beans, rinsed and drained |
2 cups shredded cheddar cheese |
Directions:
1. Preheat oven to 350. 2. Combine all ingredients into a 13 x 9 baking dish coated with cooking spray. 3. Cover and bake at 350° for 50-55 minutes or until grains are tender, stirring once. 4. Top with cheese. 5. Bake an additional 3-5 minutes or until cheese is melted. |
