we have had this at many Amish restaurant's salad bars...wonderful...even the little grandchildren enjoy this Ingredients:
2 large egg yolks |
1/2 cup sugar |
2/3 cup milk |
1 ounce unflavored gelatin |
1/2 cup cold water |
2 large egg whites, stiffly beaten |
1 teaspoon vanilla |
1 cup heavy cream |
3 tablespoons butter, melted |
3 tablespoons sugar |
12 graham crackers, crushed |
Directions:
1. beat egg yolks, and add sugar - 2. add milk and cook in top of double boiler till slightly thickened - 3. soak unflavored gelatin in cold water for 5 minutes - 4. pour hot mixture over softened gelatin - 5. stir till smooth - 6. chill until slightly thickened.add beaten egg whites, vanilla and heavy cream to chilled mixture - 7. combine melted butter, sugar and cracker crumbs to make crumb crust - 8. sprinkle half the crumbs into bottom of serving dish - 9. spread chilled mixture over crumbs. 10. sprinkle remaining crumbs over top. 11. chill in the refrigerator for several hours before serving. |
